Its Hot Out, Time for Gazpacho

Depending on where you live summer has arrived and the weather is getting hotter. It is getting to be time for summer foods and one of the best is Gazpacho! Nothing can be more refreshing on a hot day than a bowl of cold spicy vegetable soup.
Gazpacho is mainly just fresh vegetables and a little stale bread if you are a traditionalist. The cold and delicious soup is a mainstay in Spain and Portugal. It origin is ancient. It is thought to have Arabic roots and was bought to Spain by the Moors where it was adopted as part of Spanish cuisine.
The basic ingredients are simple and the dish easy to make. Tomatoes, peppers, onions, cucumber, garlic, lemon juice and wine vinegar all chopped up and then refrigerated.  The modern way it to throw them into a food processor or you can go old school and use a mortar and pestle. The thing about gazpacho is it takes time to really ferment. It is best left over night so the acids in the tomatoes have some time to "cook".
All of this typing and thinking of gazpacho is making me hungry! Time to hit the process button and wait!
